Well, this week was pretty busy! I felt better than I have in a very long time and packed as much into the week as I could handle! Tired myself right out, but had some fun out with my neighbor a couple of days, discovered a yummy new place to eat, got another room in the house painted and gave the first floor of the house a good ole cleaning! Oh yes, and I tried a new cake "recipe." I use the term recipe very loosely as the layers of the cake were made as directed on packages, but so good, nonetheless! Directions to follow menu. Mon. Jan. 19th ~ Yo - yo night (you're on your own)
Tues. Jan. 20th ~ Ha Again, I know I made something, but can't, for the life of me, remember what it was
Wed. Jan. 21st ~ Picked up my Market To Home basket so utilized a bunch of the veggies and made a yummy, veggie packed goulash
Thurs. Jan. 22nd ~ Oven fried chicken, steamed yellow squash with olive oil and Parm. cheese, sweet peas
Fri. Jan. 23rd ~ Chicken and waffles (had to use up those left overs!)
Sat. Jan. 24th ~ It was our Family FUNdue night! I got to break in the new fondue pot and made a cheese fondue (a DELICIOUS cheese fondue) served with beer bread and baby carrots, broccoli, cauliflower, sugar snap peas and green apples. We also cooked up some HUGE crab claws that our neighbor gave us. Gene and Kate had a blast with them! I even tried a few bites...it wasn't half bad (dipped in butter, of course).
Sun. Jan. 25th ~ Penne pasta with a mozzarella, parmesan and basil pesto sauce with steamed baby carrots, broccoli and cauliflower (left over veggies from our cheese fondue last night) stirred in.
Banana Pudding Poke Cake
*1 yellow cake mix and ingredients to prepare as directed
*2 small boxes of instant banana flavored pudding
*4 cups milk
*8 oz container thawed Cool Whip
*Nilla wafers (16 - 20 whole and about a cup crushed)
*Prepare cake according to package directions. When done, cool about 10 minutes. Using the handle of a wooden spoon, pokes several holes all over the cake, almost to bottom.
*Meanwhile, mix pudding and milk and let set until slightly thickened. Poor over cake then use a spatula to work pudding into the holes. Cool in refrigerator for about an hour.
*Remove from fridge and place whole Nilla Wafers on top of pudding layer.
*Gently spread Cool Whip over top.
*Sprinkle with crushed wafer.
*Serve and enjoy!
I really should get a fondue pot. Russ and I would LOVE to do something like that!
